Cozy Butternut Squash Soup Recipe for Fall

Fall is in full swing! The weatherā€™s getting cooler, the days are shorter, and thereā€™s nothing better than curling up with a steaming bowl of comforting soup. šŸ‚ If youā€™re like me and love earthy, cozy flavors, this easy butternut squash soup recipe is about to become your new go-to!

This hearty soup is perfect for chilly evenings and can be whipped up with simple, healthy ingredients. And guess what? Itā€™s cooked to perfection in my Le Creuset Signature Cast Iron Dutch Oven, because letā€™s be honest, it just makes everything taste better! šŸ§”

Ingredients:

  • 2 packs of 20oz diced butternut squash
  • 32oz of organic vegetable broth
  • 3 green onion stems, chopped
  • 1 small yellow onion, chopped
  • 1/4 orange bell pepper, chopped
  • 1 celery stem, chopped
  • Dried rosemary
  • Dried coriander
  • Spanish smoked hot paprika
  • Salt and pepper to taste

Instructions:

  1. SautƩ the aromatics: Heat your Dutch oven over medium-high heat and sizzle the chopped onions, celery and bell pepper for a few minutes. Add the diced butternut squash, green onions, and sprinkle dried rosemary, coriander, and smoked paprika. Stir occasionally, letting the vegetables brown slightly to bring out a smoky, roasted flavor (but be careful not to burn them!).

  2. Simmer to perfection: Pour in the organic vegetable broth and bring the soup to a boil. Once itā€™s bubbling, lower the heat, cover, and let it simmer until the butternut squash is tenderā€”this usually takes about 20-25 minutes.

  3. Keep an eye on the liquid: Check the soup occasionally. If itā€™s looking a little dry, add some boiling water to maintain the right consistency.

  4. Season to taste: Before blending, taste the soup and adjust the seasoning to your liking. Add more salt, pepper, or paprika if needed!

  5. Blend it up: Let the soup cool slightly, then use an immersion blender to puree it until itā€™s velvety smooth.
