The best recipe you'll want to make on repeat! 🔁
Fall is in full swing! The weather’s getting cooler, the days are shorter, and there’s nothing better than curling up with a steaming bowl of comforting soup. 🍂 If you’re like me and love earthy, cozy flavors, this easy butternut squash soup recipe is about to become your new go-to!
This hearty soup is perfect for chilly evenings and can be whipped up with simple, healthy ingredients. And guess what? It’s cooked to perfection in my Le Creuset Signature Cast Iron Dutch Oven, because let’s be honest, it just makes everything taste better! 🧡
Ingredients:
- 2 packs of 20oz diced butternut squash
- 32oz of organic vegetable broth
- 3 green onion stems, chopped
- 1 small yellow onion, chopped
- 1/4 orange bell pepper, chopped
- 1 celery stem, chopped
- Dried rosemary
- Dried coriander
- Spanish smoked hot paprika
- Salt and pepper to taste
Instructions:
-
Sauté the aromatics: Heat your Dutch oven over medium-high heat and sizzle the chopped onions, celery and bell pepper for a few minutes. Add the diced butternut squash, green onions, and sprinkle dried rosemary, coriander, and smoked paprika. Stir occasionally, letting the vegetables brown slightly to bring out a smoky, roasted flavor (but be careful not to burn them!).
-
Simmer to perfection: Pour in the organic vegetable broth and bring the soup to a boil. Once it’s bubbling, lower the heat, cover, and let it simmer until the butternut squash is tender—this usually takes about 20-25 minutes.
-
Keep an eye on the liquid: Check the soup occasionally. If it’s looking a little dry, add some boiling water to maintain the right consistency.
-
Season to taste: Before blending, taste the soup and adjust the seasoning to your liking. Add more salt, pepper, or paprika if needed!
-
Blend it up: Let the soup cool slightly, then use an immersion blender to puree it until it’s velvety smooth.
Optional add-ons ideas:
For a little extra indulgence, top your soup with any of these delicious garnishes:
- A swirl of cream for added richness
- Toasted pumpkin seeds for crunch
- Fried onions for flavor and texture
- Fresh cilantro for a burst of freshness
- Crumbled crispy bacon for a savory touch
This soup is not only flavorful and warming, but it’s also vegan, gluten-free, and filled with nourishing ingredients. Perfect for fall dinners, meal prep, or a cozy night in!
